Intro to Marmalade Class
UC Berkeley Botanical Garden
Thursday 2/27, 6-8pm
In this two-hour demo-style class, Rachel takes you through the marmalade-making process from start to finish. We will cook two different marmalades, one single-fruit and one multi-fruit. Our focus will be on the preparation of the raw fruit, the traditional 3-day marmalade process, and how to jar your marmalade. We will examine key topics such as the role of sugar, the stages of cooking, and how to test the marmalade accurately for doneness. The class includes a marmalade tasting and you will receive two jars of marmalade to take home!
Marmalade 101 Class
Blue Chair Fruit Company, Oakland
Sunday 3/2, 5-9pm
In this 4-hour introductory class, Rachel takes you through the marmalade-making process from start to finish. We will cook four different marmalades, including at least one multi-fruit marmalade. Our focus will be on identifying the physical properties of different citrus fruits and understanding how these properties relate to both the marmalade process and the end result. We will examine key topics such as how to integrate an unknown fruit into a simple base recipe, possible variations on the traditional three-day marmalade process, and a review of marmalade basics. This class starts with an hour-long jam tasting and discussion, then proceeds to the cooking process.
Home classes are limited to 15 students and class fees are nonrefundable. Students must be at least 18 years of age. We will send you an informational e-mail a few days prior to your class date. We will have all Blue Chair Fruit jam and marmalade flavors available to purchase during class.
