In this 4-hour introductory class, Rachel takes you through the jam-making process from start to finish, with a special focus on seasonal fruits. We will cook four different jams, including at least one multiple-fruit jam. Our focus will be on identifying the physical properties of different fruits and understanding how these properties affect both the cooking process and the end result. We will examine key topics such as the role of sugar, the importance of lemon juice and how to add it, the states of cooking, and how to test accurately for doneness. This class starts with an hour-long jam tasting and discussion, then proceeds to the cooking process.

Tea, dessert, and a light dinner will be provided, and you will receive four small jars of jam to take home!

Eat Real Fest 2011

erf Eat Real Fest 2011Our favorite time of the year is here - Eat Real Fest! We are SO excited to spend the weekend demoing, offering craft collaborations with some of our favorite artisan food makers, selling jam, and eating.

We'll be represented at Eat Real Fest on Friday night through a jam cocktail - our Bergamot Marmalade to be more specific! Be sure to check out the Jam Bar at 4pm to try for yourself.

On Saturday, the Blue Chair Fruit team will be sampling and selling our jams all day. For a limited time starting at 11am, our craft collaboration with Starter Bakery will be available: jam and croissants! These are sure to go quickly, so show up early! And at 2pm, Rachel will be demoing cooking with jam, pairing with Blossom Bluff (who gives us our favorite stone fruit) and pastry chef Michele Polzine.

Sunday holds more goodies, and we're so excited to pair up with our favorite bread maker, Mike the Bejkr. We LOVE his bread and can't wait to pair it with our jam. This offering starts at 1:30pm, and you won't want to miss it! Of course, we'll be offering our favorite jams for sale on Sunday as well.

We'll even be debuting a special new jam this weekend made from the mystery fruit posted below. We're crazy for its summery flavor. Curious about what it is? You'll have to come by Eat Real Fest to find out!

We can hardly believe how quickly December is going -- Hanukkah's already behind us, and there are only two weekends until Christmas. Of course, we're particularly excited about our holiday party this Tuesday (12/14) as well!

Don't forget, this weekend is extra special because we'll be at the Noe Valley Farmers' Market on Saturday, as well as the Kensington Farmers' Market on Sunday! We'll have lots of extra jam with us for your holiday entertaining and gifting needs.

We have been having a great time at our farmers' markets these past few weeks, and are busy bringing on some fabulous new staff at our markets (new About Us profiles coming soon)! We are also loving Fall here at the Blue Chair Fruit kitchen, where we are in the process of making our Quince-Rose Geranium Marmalade and a pear and quince marmalade! Also in the works: a pear and dried fig conserve with rosemary and black pepper! We also just posted our phenomenally yummy Concord Grape & Vanilla Jam and our Plummy Meyer Lemon Marmalade - our very last early Fall preserves!

We will also be doing several jam and marmalade tastings around San Francisco and the East Bay over the next several days, in addition to our normal farmers' market schedule. We will be offering our special Thanksgiving and yuletide flavors, in addition to limited-quantity flavors. For details, please see our Where to Find Us page. We hope to see you soon!

Fruit Watch 11/2: Pears, Quinces and Crabapples

We had a fantastic weekend up in Mendocino, and made sure to stop at The Apple Farm in Philo on the way! While there, we sampled a number of excellent varieties, and came home with some gorgeous Flemish Beauty pears, tiny red crabapples, and two types of quince. We also sampled several excellent apples, including Northern Spy, Sierra Beauty, Philo Gold, and Fuji. We love them all, and it's so fun to taste them side by side, because they are so different from each other! We can't wait to get going on some new flavors...
